However, I don't like the additional butter and olive oil he suggests. Makes it too greasy for my tastes.

The first tip off is that you guys call it sauce, it is gravy. sheesh.
When we were down at the Armory back in January the caterer was cracking me up with that thick NYC accent, " You'se want some more gravy on dat ?" LOL great guy.

The olive oil is fairly "heart healthy", maybe not the butter, but it is a small amount. The "used" water is just water with some of the starch from the pasta, so that would not be a problem for me. When I was a kid, we often had the sauce/gravy mixed in (keeps pasta from sticking together) and then more on top with the Romano sprinkled moderately)... best of both worlds.

guilty here as well.<----- Guilty
I am also guilty of eating just the sauce - no noodles needed - the sauce is so very tasty!

That is the way my family has always done it. We always called it sauce, never heard the gravy term until I started watching the Sopranos.

Oh and when I asked for extra Mozzarella pronounced muzzadel, the lady said "we don't have that" Huh you call yourself New York Style pizzaria?
Why are there no real pizzaria's If you don't sell Sicilian's by the piece, and have Calzone's ready to sell all day are you really a pizzaria?
Does anyone besides myself miss RC Cola? Goodness I love RC Cola. I wish they were still around!
This video didn't teach me anything my family hasn't been practicing.

I know! It's a Pie for the love of the gods! Haven't these heathens at least been to the Bronx?
